What’s so secure about a Hardware Wallet?



I understand that having a Hardware Wallet is much safer than keeping your Bitcoin wallet logged into your phone/computer, as they are vulnerable, and I also understand that a Hardware Wallet is safer than a piece of paper, as it doesn't spoil/dissolve as easily as one, and it requires a password. But considering that someone keeps the seed on a metal plate, what advantage does a Hardware Wallet have in this scenario? In fact, he will need to use a phone/computer to access the wallet, and in the meantime it can be hacked, but isn't that exactly the case with a hardware wallet too?
